摘要
主要研究了复合酶辅助提取香圆枳壳柚皮苷及其对亚硝酸盐的清除作用。以香圆枳壳柚皮苷得率为指标,通过响应面分析法确定复合酶辅助提取香圆枳壳柚皮苷的最佳条件,即为pH5.3,超声波时间32 min,超声波功率230 W,加酶量134μg/g,在此条件下,香圆枳壳柚皮苷得率为3.75%。香圆枳壳柚皮苷对亚硝酸盐具有较好的清除作用,清除率与柚皮苷的浓度呈正相关性,当香圆枳壳柚皮苷浓度达到3 mg/m L时,其对亚硝酸盐的清除率可达到91.1%。香圆枳壳柚皮苷是一种有效的亚硝酸盐清除剂,可用于发酵蔬菜和添加亚硝酸盐作为发色剂肉制品的加工。
This study mainly discussed the composite enzyme assisted extraction of naringin from Fructus Aurantii and its clearance to nitrite.With the extraction rate of naringin from Fructus Aurantii as indicator,the optimum condition of composite enzyme assisted extraction of naringin from Fructus Aurantii were determined by the response surface methodology,such as pH for 5.3,ultrasonic time for 32 min,ultrasonic power for 230 W,enzyme dosage for 134 μg/g,under these conditions,the extraction yield of naringin from Fructus Aurantii was 3.75%.The results showed that naringin from Fructus Auranti had a strong elimination effect to nitrite,the clearance rate was positively correlated with the concentration of naringin from Fructus Aurantii increased.When concentration of naringin from Fructus Aurantii was 3 mg/m L,the clearance rate to nitrite was 91.1%.Naringin from Fructus Aurantii showed a powerful reduction effect to nitrite and would be hopeful to be applied in the processing of fermented vegetables and meat products added with sodium nitrite as a color fixative.
