摘要
食品安全是白酒产业的生命线。通过文献综述和情报检索,梳理白酒食品安全的传统和热点问题。在此基础上,分析了白酒食品安全的政府管控和社会监督等外部监管机制,种植阶段、产品生产阶段和包装运输阶段的食品安全内部管理和食品安全体系,以及内外机制交互形成的口碑效应。最后以泸州老窖为例,对白酒企业食品安全控制技术、体系和食品安全文化等进行了详细阐述。为白酒企业食品安全管理和白酒行业食品安全监管提供参考和建议。
Food safety is the lifeline of Baijiu industry. Through literature review and information retrieval,the traditional issues and hotspot issues of Baijiu food safety were discussed. On this basis,the paper analyzed the external supervisor mechanisms (including government control and social su-pervision) of laaijmfood safety,internal managements (planting stage,production stage,final packaging,and transportation stages),food safety sys-tem and the word-of-mouth effect of interaction between internal and external mechanisms. Finally,using Luzhou Laojiao as an example,the food safety control technology,system and culture of Baijiu enterprises were elaborated,which provided references and suggestions for food safety man-agement of Baijiu enterprises and food safety supervision of Baijiu industry.
