摘要
为了解涂膜处理对冷鲜羊肉贮藏品质的影响,本试验研究了羧甲基纤维素(CMC)、海藻酸钠和壳聚糖3种涂膜剂处理冷鲜羊肉后,样品在贮藏过程中菌落总数、pH值、汁液损失、色泽和挥发性盐基氮(TVB-N)的变化情况。结果表明:2%壳聚糖乙酸溶液能够有效地抑制冷鲜羊肉表面杂菌的生长繁殖、减缓pH值及TVB-N含量的上升速度、降低贮藏过程中的汁液损失率,阻止肉色指标亮度(L~*)值、红度(a~*)值和黄度(b~*)值的快速下降,总之,2%壳聚糖乙酸溶液对冷鲜羊肉贮藏品质有明显改善作用;2%的羧甲基纤维素和海藻酸钠溶液,对冷鲜羊肉贮藏品质没有改善作用。
To understand the effect of carboxymethyl cellulose( CMC),sodium alginate and chiotosan treatments on chilled mutton quality under 0 ~ 4℃ storage,the total bacterial count,p H value,juice loss,color and luster,and volatile base nitrogen( TVB-N) were determined and analyzed. The results showed that 2% chitosan acetic acid solution could effectively inhibit the growth and reproduction of bacteria on the surface of chilled mutton,slow down the increase of p H value and TVB-N content,reduce the juice loss rate,and prevent the meat color indexes( L~*,a~*,b~*) decrease rapidly. In conclusion,2% chitosan acetic acid solution significantly improved the storage quality of chilled mutton,while 2% CMC and sodium alginate solutionhad no significant effects on that.
