摘要 海参是营养价值极高的海产品,具有高蛋白、低脂、低糖、无胆固醇的特点,并富含多种人体所需氨基酸、维生素、脂肪酸以及多种微量元素等成分。近年来,随着人们保健意识的逐渐增强,海参作为滋补品也走入了寻常百姓家。在海参产业不断发展的过程中,各种造假手段也不断出现,严重扰乱市场,误导了消费者。主要对干海参的选择、主要质量控制指标进行简述,为未来海参产业的发展提供一定地科学指导和理论依据。 Sea cucumber is a high nutritional value of seafood,with characteristics of high protein,low fat,low sugar,no cholesterol,and rich in a variety of amino acids,vitamins,fatty acids as well as multiple trace elements ingredients required by the human body.In recent years,with the gradual increase in health awareness of people,sea cucumber as a tonic has been recognized by ordinary people.In the process of continuous development of sea cucumber industry,all kinds of counterfeiting means are also emerging,seriously disrupting the market and misleading consumers.The selection of dry sea cucumber and main quality control indicators were briefly showed.Furthermore,the substantial scientific guidance and theoretical basis for the future development of sea cucumber industry were provided.
