摘要
为考察含本草香加料配方的蛋白质-多糖载体体系对某品牌卷烟感官质量的影响,采用烤烟叶蛋白(FTP)及果胶(PEC)进行复合制备复合乳液载体体系并对3种不同的加料配方进行包合,在评价加料配方保留率的基础上,对含载体体系的某品牌卷烟进行感官质量评价。研究结果表明:相比较于直接JX加料配方的某品牌卷烟样品,应用载体体系可提高保留率2.96倍;FTP/PEC(1:2)载体体系保留率>JX加料配方FTP/PEC(1:1)载体体系保留率;含JX加料配方载体样品保留效果优于JX-1加料配方及JX-2加料配方的样品。通过卷烟感官对比评吸,三种含本草香JX加料配方、JX-1加料配方及JX-2加料配方载体体系卷烟对卷烟感官评吸结果的趋势性基本相同,其在增加烟气细腻柔和程度以及掩盖杂气、增加回甜感等方面具有较明显的效果,但烟气劲头与浓度略有降低。
In order to investigate the effect of protein-polysaccharide carrier system containing the extract of materia medica on the sensory quality of Jinshen cigarettes, the composite emulsion carrier system was prepared by using flue-cured tobacco protein(FTP) and pectin(PEC), and the evaluation of the retention rate and the sensory quality of the cigarettes containing the carrier system of were carried out. The results showed that the retention rate was 2.96 times higher than that of the direct JX feed recipe. The retention rate of the FTP/PEC(1:2) carrier system was better than that of the FTP/PEC(1:1) carrier system. Retention rate of the carrier system JX-containing formulation carrier sample retention effect was better than JX-1 feeding formula and JX-2 feeding formula samples. JX-1 feeding formula, JX-2 feeding formula carrier system cigarettes on the cigarettes sensory evaluation results of the trend were basically the same, in the increase sensory evaluation in the degree of Jinshen cigarettes which had a more obvious effect on the covering the miscellaneous gas, increasing back to sweet, however the flue gas momentum and a slight decreased in concentration.
