摘要
以罗非鱼鳞为原料,制备胶原肽螯合锌,以含锌量为响应值,选取pH、温度、时间、胶原肽与硫酸锌的摩尔比为自变量,在单因素试验的基础上,通过Box-Behnken模型设计响应面优化试验,确定了最佳螯合工艺条件。结果表明,最佳螯合工艺条件为:pH 3.8,温度74.1℃,时间2.1 h,肽锌摩尔比1:1。在此条件下制备胶原肽螯合锌的含锌量验证值为14.21%,与理论值14.34%较接近。
The preparation conditions of collagen peptide chelated zinc were studied, with tilapia scales as raw material. The influences of p H, temperature, time and molar ratio of collagen peptide to zinc sulfate on the zinc content of collagen peptide chelated zinc were investigated. The optimization experiments of response surface were designed by Box-Behnken based on one-factor experiments. The results showed that the optimal chelating conditions were pH 3.8, 74.1 ℃, 2.1 h and peptide-zinc molar ratio 1:1. Under these conditions, the actual value of zinc content was 14.21%, which was close to the predictive value 14.34%.
