地方应用型本科院校《发酵工程》理论与实践教学的思考

摘要 发酵工程作为食品科学与工程、生物技术等相关专业的核心课程,既注重理论,又与生产实践紧密相关。尤其作为地方性、应用型本科院校,如何在教学环节既注重理论又能够充分实现学生动手实践,充分发挥地方性、应用型高校的优势是本门课程教学的关键。通过教学内容与教学方法的创新使学生掌握发酵相关的基本原理,在此基础上通过地方应用型高校与地方各类食品相关企业建立的校地合作关系,以课程实习、课程实践等方式,深入企业生产一线,利用产学研相关平台,熟悉发酵相关的工艺过程及操作流程等实际问题,锻炼分析、解决问题能力,有效提高本课程的教育教学质量、培养学生实践能力,培养社会需求的应用型人才。 As a main core course of Food science and Engineering/Biotechnology,fermentation engineering has closely connection with both theory and practice.Especially in local application-oriented academy,how to both value the theoretical teaching and give full play to student's initiative on practical ability are seen as the key to achieve the superiority of local application-oriented academy during the teaching processes.Firstly according to innovation of teaching contents and teaching methods to help students build their theoretical fundamentals,based on which,using the already established cooperative relationship between college and food-related enterprises to get familiar with the technical flow and operational?process,and understand the existing problems and relevant solutions using various approaches.By doing which can giving full play to the superiority of local application-oriented academy,and helped in improving both teaching quality and practical ability of students,putting forth effort to train applied talents.
