摘要
开菲尔是一种发酵乳制品,具有独特的风味,其发酵剂是开菲尔粒。就近年来国内外对开菲尔粒的微生态分析、开菲尔的益生功能、开菲尔发酵剂及产品的开发等方面进行了综述,以期为开菲尔产业后续研究提供参考。
Kefir is a fermented dairy product, with a unique flavor, its starter is Kefir grain. In this paper, we reviewed the microecological analysis of Kefir grain, the beneficial function of Kefir, the development of Kefir starter and product at home and abroad in order to promote the development of Kefir industry.
