摘要
研究了壳寡糖修饰前后抗性淀粉的物化特性与消化特征。将高直链玉米淀粉与壳寡糖共混后经喷雾干燥制备壳寡糖修饰淀粉。利用扫描电子显微镜、激光粒径分析仪、傅里叶变换红外光谱仪等现代分析技术研究了原淀粉和结构修饰后淀粉的物化性质。并测定了2种淀粉油脂和胆固醇的吸附率,建立消化模型,研究了修饰前后淀粉的消化特征。结果表明,壳聚糖修饰抗性淀粉。表面覆盖了1层壳寡糖薄膜,颗粒粒径明显增大,壳寡糖与淀粉颗粒发生交联。经过修饰后,淀粉的油脂和胆固醇吸附率提高,消化速率减慢。壳寡糖修饰淀粉在消化终点的葡萄糖释放量比原淀粉降低了9.02%。
The physicochemical properties and digestion characteristics of resistant starch (RS) and chitosan oligosaccharide(COS) modified starch (CMS) was investigated. High amylase corn starch was mixed with COS to prepare COS modified starch by spray-drying. The physicochemieal properties was measured by SEM, laser diffraction analyzer and FTIR spectrometer. The oil and cholesterol adsorption rate of two kinds samples was tested, digestion model was established to observe their digestion characteristics. The results showed that CMS were covered by COS, leading to the particle size of CMS become bigger than raw starch granules, and crosslinking reaction had occurred between two components. After modified, CMS showed higher oil and cholesterol adsorption rate and lower digestion rate. At the digestion endpoint, the glucose release quantity of CMS decreased by 9.02%.
