摘要
目的:调查某市市售大米和小麦粉5种有害金属污染状况,评价人群健康危害风险,为食品安全监督管理提供依据。方法:以县为单位均衡样本,6个县/区共采集市售大米和小麦粉各30份,其中超市41份,农贸市场19份,开展总砷(As)、镉(Cd)、铬(Cr)、汞(Hg)和铅(Pb)5种有害金属元素检测,按照美国国家环境保护署(USEPA)推荐方法,建立大米和小麦粉中重金属污染健康风险评价模型,对有害金属通过饮食途径引起的健康风险作出评价。结果:所有样品5种金属元素检出率为100%;大米中1份Hg超标,超标率3.33%;小麦粉中1份Cd超标,超标率为3.33%,大米和小麦粉中有害金属健康年风险值均大于各机构推荐最大可接受风险水平(1×10-4a-1)。结论:该市市售大米和小麦粉中有害金属污染物存在人群健康危害风险,需引起关注。
Objective To investigate the contamination of 5 kinds of heavy metal in the sold rice and wheatmeal in a city of China, to evaluate its potential risk to human health and to provide evidence for the relevant supervision and administra- tion department of food safety. Methods Totally 60 samples were collected, including 30 samples of rice and 30 samples of wheatmeal; 41 were from supermarkets and 19 were from farmer＇s markets. Methods recommended by USEPA were used to evaluate the exposure risk and detect heavy metallic elements., arsenic （ As）, cadmium （Cd）, chromium （Cr）, mercury （Hg） and lead（Pb）. Results The 5 kinds of metallic element had been detected in all 60 samples. In one rice sample, the content of Hg exceeded the Hg standard（3.33 % ）, and in one wheatmeal sample the content of Cd exceed the Cd standard （3.33% ）. The contents of all of the metallic elements detected in 60 samples exceeded the recommended maximum ac- ceptable risk ievel（1 × 10^-4a^-1）. Conclusions There exist health risks from metallic elements of rice and wheatmeal in sale, therefore, some effective measures should be adopted in food safety surveillance.
