摘要
冠突散囊菌是茯砖茶发酵中的优势菌,其数量和质量直接关系到茯砖茶的品质,国内外学者对其进行了比较全面的研究。本文中,笔者综述了冠突散囊菌的分离鉴定、分子生物学、培养、发花过程、保健功能及其应用等几个方面,并对其研究与应用前景进行了展望。
Eurotium cristatum is the dominant fungus in the fermentation of rFu- brickr tea.The quantity and quality of E. cristatum are directly related to the quality of brick tea.Extensive studies had been done. We review the researches in the isolation and identification,molecular biology, cultivation,growing process of the so- called golden flower＇ fungus E. cristatum. We also indicate the research and application prospects of E. cristatum.
