摘要
通过与广式传统年糕对比,介绍淮山年糕的产品开发由来、生产工艺流程,对淮山年糕生产中关键控制点进行详细阐述,探讨淮山年糕目前所存在的技术难题及未来研究方向。
Compared with the cantonese traditional rice cake,the origin of product development and production process of yam cake were introduced.The critical control points of yam cake were elaborated,the present technical challenges and future research directions of yam cake were explored.
