小金蝙蝠蛾幼虫及蛹的营养成分分析 被引量:4

摘要 为明确蝙蝠蛾幼虫及蛹体的主要营养成分,评价其营养价值,为其开发利用提供理论依据,运用国家相关标准检测方法测定小金蝙蝠蛾幼虫和蛹的蛋白质、氨基酸、矿质元素、水分等含量。结果表明:小金蝙蝠蛾幼虫、蛹的蛋白质含量分别为108.2 mg/g和124.5 mg/g,粗脂肪含量分别为51.6 mg/g和45.4mg/g,灰分含量分别为17.2mg/g和23.2mg/g,碳水化合物含量分别为60.7mg/g和62.4mg/g,单位质量能量分别为5.18kJ/g和4.85kJ/g;蝙蝠蛾幼虫、蛹均含有17种氨基酸,总氨基酸含量分别为31.24%和41.28%,必需氨基酸含量分别为11.06%和15.61%,非必需氨基酸含量分别为20.18%和25.67%,必须氨基酸占总氨基酸含量的比例分别为35.40%和37.81%,必需氨基酸与非必需氨基酸之比分别为0.55和0.61;蝙蝠蛾幼虫、蛹的Cu含量分别为11.14μg/g和15.08μg/g,略高于我国规定食品中Cu的最高限量(Cu≤10mg/kg),未检出Hg,Pb、As和Cd含量均未超出国家规定食品中重金属元素含量的最高限量。小金蝙蝠蛾幼虫和蛹均含有比较丰富的蛋白质和氨基酸,具有一定的开发食用价值。 To clarify the main nutrients in the larvae and pupae of H.xiaojinensis,and to evaluate the nutritional value,so as to provide the theoretical basis for the utilization and development,the authors used the national standard test method to determine the contents of protein,amino acid,mineral elements and water in the larvae and pupae.Results:The protein content of larvae and pupae were respectively108.2mg/g and 124.5 mg/g,crude fat content were 51.6 mg/g and 45.4 mg/g,ash content were17.2mg/g and 23.2mg/g,carbohydrate content were 60.7mg/g and 62.4mg/g,unit mass energy value were 5.18kJ/g and 4.85kJ/g;Bat moth larvae and pupae contained 17 kinds of amino acid,total amino acid content were 41.28% and 41.28% respectively,essential amino acids were 11.06% and 15.61%respectively,the non-essential amino acid contents were 20.18%and 25.67%respectively,the amino acids content accounted for 35.40% and 37.81% of total amino acid respectively.The ratio of essential amino acids to non-essential amino acids were 0.55 and 0.61;Cu content in the larvae and pupae were respectively 11.14 μg/g and 15.08μg/g,slightly higher than the maximum limit(Cu≤10 mg/kg)stipulated in food,Hg,Pb,As and Cd were not detected.Both of the larvae and pupae of H.xiaojinensis were of some edible value because of the rich contents of protein and amino acids.
