摘要
针对美国FDA对大连天宝绿色食品股份有限公司抽检时提出的冷冻鲽鱼解冻时间长可能导致的微生物增殖问题,对该公司的鲽鱼加工前解冻过程进行跟踪监测,监测内容包括原料、解冻用水、解冻间空气微生物指标以及原料和环境温度变化情况,以期了解水产品外来原料在企业解冻期间的微生物变化情况,为来料加工水产品企业提供基础数据.本次监测结果显示,在16 h的解冻期间3个批次的冷冻去头去脏黄金蝶鱼无相关致病菌检出,菌落总数( CFU )为8.0×10^2~8.5×10^2/g,大肠菌群和大肠杆菌的MPN值均为<3/g.该结果既符合美国FDA对外来水产品的一般微生物要求,又符合我国行业标准对进出口水产品的一般微生物要求.该公司的解冻方式可以使原料温度一直保持在0℃以下,在该温度条件下无微生物增殖风险.
For the frozen flatfish of thawing problem raised by FDA to DaLian TianBao Green Food Co ., Ltd., the thawing process of flatfish before machining was monitored .Test contents included raw materials , tha-wing water and air of microbial indicators , as well as the raw materials and environment temperature .Hope to understand foreign raw aquatic products of microbial changes during thawing in the processing enterprise and pro -vide basic data for foreign raw materials processing of aquatic products enterprises .The monitored results show that related pathogenic bacteria were not detected in three batches of frozen flatfish during 16 h thawing process , the aerobic bacterial count value (CFU) was 8.0 ×10^2 ~8.5 ×10^2/g, total coliform group and Escherichia coli MPN value were both <3 /g.The results were not only accord with the general microbial requirements of the FDA about foreign aquatic products , and but also conforms to the general microbial requirements of our country industry standard on import and export of aquatic products .The temperature of raw materials was below 0℃with the thawing way of company , at this temperature there was no microbial proliferation risk .
