摘要
生姜中含有姜酚、姜烯等多种对人体有益的有效成分,具有抗氧化、抑菌、降血糖等多种良好的功效。生姜应用于饮品加工中,具有广阔的市场前景和优势。文中详细介绍了生姜的功效及在饮品加工中的应用现状,并就生姜在饮品加工中现存的一些问题及解决措施提出了参考意见。
Ginger (Zingiber officinale Rosc) contains a lot of biologically active components such as gingerol and zingiberenc that are beneficial to human beings for its antioxidant, antibacterial and hypoglycemic activities. It has an application value and developmental potential to use ginger in beverage processing. Ginger function and its application in beverage are introduced in details in this mini -review paper. Furthermore, problems existed in the application of ginger in beverage production are analyzed and strategies to deal with these problems are proposed. The purpose is to provide useful references for the development of new beverage products.
