摘要
葡萄酒历史悠久,文化深厚,种类丰富,对消费者身心健康有诸多好处。对于葡萄酒的研究很广泛,酿造、酵母纯化筛选、葡萄酒成分分析等都是研究的热门。介绍葡萄酒的分类和作用,综述新型葡萄酒的原料成分、功能,指出新型葡萄酒的成分表除含有葡萄汁和二氧化硫以外,还有其他成分,以为葡萄酒行业的产品研究提供方向,并在一定程度上促进葡萄酒行业的发展进程。
With a long history,profound culture and rich variety,wine has many benefits for consumers'physical and mental health.There are a lot of researches on wine,such as brewing,yeast purification screening and wine composition analysis.Classification and effect of wine was introduced.Raw material composition and function of new-type wine was reviewed.Beside of grape juice and sulfur dioxide,there were other components in composition table of new-type wine.It can provide a new direction of research and development of wine industry,and promote the development of the industry to a certain extent.
