摘要
目的了解新疆餐饮食品中食源性致病菌的污染状况。方法采用随机抽样的方法对新疆兵团检测点进行连续监测,按照国家标准对9中常见病原菌进行监测分析。结果 21类餐饮食品3 003份样品中分离到104株致病菌,平均检出率为3.46%。饮用水中铜绿假单胞菌检出率最高达21.43%;调理肉制品中4种致病菌污染率达20.78%,其中单核细胞增生性李斯特菌就达16.88;婴儿配方食品中阪崎肠杆菌污染率达4.00%。单增李斯特菌在9类食品中检出率为1.51%(22/1 461),金黄色葡萄球菌在13类食品中检出率0.79%(21/2 653),沙门菌在19类食品中检出率为0.15%(4/2733)。志贺菌(0/1 031)和副溶血弧菌(0/360)均未检出。结论新疆餐饮食品存在不同程度的食源性致病菌污染,其中肉类食品、饮用水和婴儿配方食品相对较高,应加强卫生监督管理。
Objective To understand the contaminating characteristics of food borne pathogens in catering food in Xinjiang province. Methods Samples were randomly selected from corps of Xinjiang region for continuous monitoring and results assessment according to national standard. Results Among the samples, 104 bacteria strains were isolated from 3003 samples in 21 species food with an overall positive rate of 3.46%. Pseudomonas aeruginosa detection rate was 21.43% in drinking water. Four kinds of pathogenic bacteria contamination rate was 20.78% in opsonin meat products, including Listeria monocytogenes reached 16. 88%. Enterobacter sakazakii contamination rate was 4% in infant formula. Listeria monocytogenes was 1.51% (22/1 461 ) in 19 kinds of foods. The detection rate of Staphylococcus aureus was 0.79% (21/2 653) in 13 kinds of food, and was O. 15% (4/2 733) in 19 kinds of food. Shigella (0/1 031) and vibrio parahaemolyticus (0/360) were not detected. Conclusion The surveillance data indicate that food borne pathogen pollution exists at different levels in Xinjiang region, and relatively high in meat food, drinking water and infant formula. The health inspection in catering food should be strengthened.
