本文从南瓜果肉、南瓜皮和南瓜籽3个方面,阐述了南瓜多糖、果胶、膳食纤维、黄色素、多酚等功效成分的提取方法和操作要点,并介绍了南瓜片、南瓜粉、南瓜汁、南瓜酒等南瓜产品的开发现状和发展前景。
