本文从南瓜果肉、南瓜皮和南瓜籽3个方面,阐述了南瓜多糖、果胶、膳食纤维、黄色素、多酚等功效成分的提取方法和操作要点,并介绍了南瓜片、南瓜粉、南瓜汁、南瓜酒等南瓜产品的开发现状和发展前景。
The different extraction techniques and process requirements of the nutritious components from pumpkin were introduced,inculding polysaccharide,pectin,dietary fiber,yellow pigment,polyphenol,etc.The present state and development prospects of pumpkin products were introduced,for example,pumpkin slices,pumpkin powder,pumpkin juice,pumpkin,etc.
