摘要
海藻多糖具有抑菌、抗病毒和抗氧化等多种生物活性,可用于食品的涂膜保鲜。本文概述了海藻多糖的生物活性及其保鲜机理,并将目前已发现的具有活性的海藻多糖种类及其在食品涂膜保鲜中的应用现状、保鲜效果等进行综述,同时对其未来发展趋势进行展望。
Seaweed polysaccharide has proverbial biological activity, such as antibacterial, antiviral, and antioxidant, which can be used for the coating preservation of food. In this paper, these studies on the bioactivity and fresh-keeping mechanism of the seaweed polysaccharides are outlined, the species and fresh-keeping effect of active seaweed polysaccharide in food fresh-keeping application status are reviewed, and the development trends of the seaweed polysaccharide in food preservation are also prospected.
