摘要
马铃薯的消费量仅次于水稻、小麦和玉米,是全球流行的主要粮食之一。我国既是全球第一大马铃薯生产国,也是马铃薯的消费大国。马铃薯营养丰富,在全球许多地区作为膳食纤维和维生素的主要来源。研究表明,马铃薯可以预防心血管疾病和糖尿病等,但也有许多研究持相反观点。本文对马铃薯生产和消费状况、营养价值和对能量代谢、糖尿病、心血管疾病的影响的研究进展进行综述。
As a food crop for human consumption,the importance of potatoes( Solanum tuberosum) follows that of only rice,wheat and corn in the world. China ranks as the world's first largest potato producer,and is one of the key consumers as well. Potatoes are wonderfully nutritious and the most important sources of dietary fiber and vitamins in some regions. Inconsistent findings from epidemic studies have prolonged the controversy over the relationships between potatoes and human health. This article reviewed the researth advancements of the effects of the production and consumption status,and the nutritional values of potatoes on energy metabolism diabetes and cardiovascular diseases.
