摘要
为研究家禽糖原合成酶基因(GS)mRNA表达量与肌糖原含量及pH值相关性,试验检测武定鸡和艾维茵肉鸡肌肉组织中GS mRNA表达量、肌糖原含量及pH值。结果显示,武定鸡肌肉中GS mRNA表达量和肌糖原含量均高于艾维茵肉鸡,而pH值则相反;GS mRNA表达量与肌糖原含量呈正相关,且肌糖原含量与pH值呈显著负相关。可见,GS基因是影响家禽肉品质的重要候选基因。
In order to study the correlations between GS gene mRNA expression and muscle glycogen content,pH value in poultry,Wuding chicken and Avian broiler were selected to detect GS gene mRNA expression,muscle glycogen content and pH value in muscle tissue. The results showed that GS gene mRNA expression and glycogen content in Wuding chickens' muscle were higher than those in Avian broilers' muscle, but pH value was just the opposite. GS gene mRNA expression was positively correlated with muscle glycogen content, but there was significantly negative correlation between muscle glycogen content and pH value. It was concluded that GS gene played an important role in regulating glycogen content in chickens,and could be selected as a candidate gene of meat quality.
