摘要
SS餐厅吸纳了餐桌礼仪,追求食物等级,使得西餐厅区别于大众工业食物,培育起中产阶级的食物偏好,转化为中产阶级的文化认同。国家和市场发挥了对中产阶级的建构作用,标准化食物的消费空间支持了中产阶级"社会"的建构,同时也依靠国家与市场的建构力量。中产阶级充分分享了文化多样性的阶层文化,相反他们却是消费标准化服务的社会群体。功能性和操作性是标准化生产与服务的技术核心,外地劳工向技术工人转化。阶级经验以隐匿的方式累积。
The consumer group of middle class have been a part of western restaurant named with SS. They rely on the food pro-vided by the restaurant through the standardized production and assembly line, they form some kind of food preference. The tablemanners have been a remarkable character differenced from fast food and popular industrial food. The food preferences have beentransferring to the cultural identity of middle class. I have to say it is standardized production and service bringing the employeesthe class experiences as working class. The restaurant relies on informal economic to reduce human cost. The society of middleclass is depended on the food space of the western restaurant while it is cultural identity not class consciousness recovering forthe middle class as a multicultural society fused stratum characters together, furthermore, the structures of multicultural societyof white collar are composed mainly by nuclear family and intimate relationship between love and marriage.
