摘要 建立高效液相色谱-串联质谱仪测定婴幼儿食品中丙烯酰胺含量的方法。以13C3-丙烯酰胺为同位素内标,4%三氯乙酸水溶液作为提取液,经Na Cl盐析,乙腈萃取净化,通过高效液相色谱-串联质谱仪多反应监测模式进行测定,内标法定量。该方法的线性范围为12.24 ng/m L^612 ng/m L,相关系数r2>0.999 9,检出限为7μg/kg,定量限22μg/kg。3种婴幼儿食品及辅助食品中丙烯酰胺的加标回收率为96.5%~104.2%,相对标准偏差为0.9%~2.5%。本方法具有操作简便、准确率高、重现性好等优点,可应用于多种婴幼儿食品中丙烯酰胺含量的测定。 A method using isotope internal standard for determination acrylamide in infant foods had been established by ultra high-performance liquid chromatography coupled with quadrupole tandem mass spectrometry(HPLC-MS/MS). The sample was extracted with 4 % trichloroacetic acid solution, and then purified by liquid-liquid extraction with acetonitrile, analyzed by HPLC-MS/MS in a multi-reaction monitoring(MRM) mode, an isotope internal standard was added for quantification. The correlation coefficient(r2) of acrylamide was more than 0. 999 9 in linear range of 12. 24 ng /m L-612 ng /m L. The detection limit and quantification limit were was 7 μg/kg and 22 μg/kg. The average spiked recoveries were in the range of 96.5 %-104.2 % with the relative standard deviations(RSD) of 0.9 %-2.5 %. The results showed this method was simple,high sensitivity, high accuracy and repeatable for the determination of acrylamide in kinds of infant foods.
