摘要
探讨双孢蘑菇采后贮藏适宜的CO_2体积分数,减少双孢蘑菇贮藏过程中腐败变质的发生,为双孢蘑菇采后贮藏保鲜提供理论依据。在5℃低温和95%相对湿度的低温冷库中,经过不同CO_2体积分数的贮藏,研究其对双孢蘑菇失质量率、硬度、白度、可溶性固形物、呼吸速率和酶活性等指标的影响。结果表明,在贮藏过程中,随着CO_2体积分数的升高,延缓了失质量率的上升和硬度的下降,能显著(p<0.05)抑制双孢蘑菇的呼吸速率,使可溶性固形物和酶活性变化缓慢。CO_2体积分数为20%时,能有效抑制双孢蘑菇呼吸速率、多酚氧化酶(PPO)和过氧化物酶(POD)活性的上升,并且在减缓双孢蘑菇硬度、白度、可溶性固形物下降方面效果最好,能极显著(p<0.01)地延缓硬度和可溶性固形物的下降。
The purpose of this study is to discuss the appropriate CO2 concentration and reduce deterioration of the storage of Agaricus bisporus, and to provide theoretical basis for Agaricus bisporus postharvest fresh-keeping. The effects of CO2 concentration on storage quality of Agaricus bisporus are studied at 5 ℃ and 95% relative humidity under controlled atmosphere storage. The weight loss rate, hardness, whiteness, total soluble solids, respiration rate and polyphenol oxidase (PPO) activity are measured during the storage period. The results show that with the increase of CO2 concentration delayed the increase of the weight loss rate and the decrease of the hardness. High CO2 concentration can significantly (p〈0.05) inhibit the respiration rate and make the change of soluble solids and enzyme activity slowly. When CO2 concentration is 20%, it can effectively inhibit the increase of respiratory rate, PPO and POD activity of the Agaricus bisporus, and the effect of the decrease of the hardness, whiteness and soluble solids is best, and it can be highly significant (p〈0.01) delay the decrease of hardness and soluble solids.
