虹鳟鱼骨营养成分分析 被引量:9

摘要 对虹鳟鱼骨中总蛋白、胶原蛋白、总氨基酸、脂肪与矿物质等营养成分进行分析检测。结果表明:虹鳟鱼骨中总蛋白、胶原蛋白、总氨基酸、脂肪、灰分含量分别为21.32%、4.56%、19.08%、18.38%、11.93%,其中必需氨基酸为22.03%;鱼骨中不饱和脂肪酸和饱和脂肪酸含量分别为13.36g/100g,5.25g/100g,其中二十碳五烯酸(EPA)+二十二碳六烯酸(DHA)含量为3.36g/100g,占脂肪酸含量的18.05%;虹鳟鱼骨中钙、磷、钠、钾含量较高,分别为50252.58mg/kg、32893.20mg/kg、2080.52mg/kg、1113.89mg/kg,同时还含有铁、锌、锰等多种微量元素。虹鳟鱼骨营养丰富,颇具开发利用价值。 The nutritional components of the Trout bone including total protein, collagen, total amino acid, fat and mineral elements were determined. The results showed that the contents of total protein, collagen, total amino acid, fat and ash in the Trout bone were 21.32%, 4.56%, 19.08%, 18.38%, 11.93%, respectively, and EAA was 22.03% of the total protein.The ratio of unsaturated fatty acid and saturated fatty acid in fish bone were 13.36g/100g and 5.25g/100g, respectively. The sum of EPA and DHA content was 3.36g/100g, 18.05% of the fat acid. The content of Ca, Zn, P, Na, K was higher which was 50252.58mg/kg and 32893.20mg/kg, 2080.52mg/kg, 1113.89mg/ kg, respectively.Other mineral elements including Fe, Zn, Mn, Mg were also analyzed. Trout bone has abundant nutritional components and a higher value of development.
