摘要
[目的]对冷却肉表面的微生物进行分离、检测与鉴定,为冷却肉微生物安全评价和预测预报提供技术支撑。[方法]采用基础培养基和选择性培养基对普通冷却牛肉表面主要微生物菌群进行分离、筛选,并利用用API条或VITEK2 Compact进行菌株的初步鉴定。[结果]本研究共分离13株表面微生物,其中G+菌株6株,G—菌株7株;G+菌中2株为乳酸菌属、1株为索丝菌属、3株为李斯特氏菌属;G—菌中4株为肠杆菌科、3株为假单胞菌属。[结论]冷却牛肉表面存在多种致腐败微生物,应对冷却牛肉建立合理的监测、预测及预报系统。
[Objective] The present research aimed to propose a technical support for chilled meat by isolating, detecting and identifying the surface microorganism in chilled beef. [Methods] The surface microorganisms were isolated by basal culture medium and selective medium. The stain was detected by API or V1TEK2 Compact instrument. [Results] 13 stains were isolated in the present research, which containing 6 gram-positive stains and 7 gram-negative stains. The present research also showed that 13 stains contained 2 stains lactobacillus, 1 stain of Brochothrix, 3 stains of Listeria Monocytogenes, 3 stains of Pseudomons and 4 stains of Enterobacteriaceae. [Conclusion] Various kinds of microorganisms were exists in chilled beef and rational forecast system must be build in order for good operation.
