摘要
以砂糖橘为试材,以普通聚乙烯(PE)保鲜袋(厚度0.03 mm)包装为对照,研究一种新型果蔬保鲜膜(袋)(由丙纶纺粘无纺布制成,厚度0.35 mm)包装对砂糖橘在(5±1)℃条件下的贮藏保鲜效果。结果表明:用普通PE袋包装砂糖橘在贮藏40 d后,果实CO2中毒变味现象严重,失去食用价值。而新型保鲜膜(袋)透气透湿性良好,袋内气体成分适宜(CO2浓度:0.5%,O2浓度:12%),用该保鲜膜(袋)包装的砂糖橘贮藏60 d保鲜效果最佳,失重率在10%左右,好果率可达96%,可溶性固形物(TSS)、可滴定酸(TA)、VC含量可保持鲜果的90%以上,总糖和还原糖含量上升15%左右,果实新鲜饱满,风味与口感良好。
With Shatangju fruits as materials and ordinary polyethylene (PE) bag (thickness was 0.03 ram) as the con- trol, the preservation effects of a new type bag for fruit and vegetable (which was made by polypropylene nonwoven and thickness was 0.35 mm) on Shatangju fruits were studied during storage at (5±1) ℃. The results showed that, after 40 days storage and packaged with PE bags, the taste of Shatangju fruits changed serious because of CO2 poisoning and lost food value. However, because of the breathability and moisture permeability were good in the new type bag, the gas components were good in the bag (CO2: 0.5%, 02: 12%). The preservation effect of the new type bag on Shatangju fruits was the best during 60 days storage, the weight loss rate was about 10%, the good fruit rate was up to 96%, the contents of TSS, TA and VC could keep more than 90% of fresh fruit, the contents of total sugar and reducing sugar increased by about 15%, the Shatangju fruits were fresh and plump, and the flavor and taste were very good.
