摘要
为探讨柿果软化机理,本研究以生产上的主栽涩柿品种“磨盘柿”为试材,对磨盘柿采后贮藏过程中果肉硬度和丙二醛含量的变化进行了研究。结果表明:磨盘柿果实在贮藏过程中硬度呈下降趋势,且随着果实的软化,丙二醛含量先迅速上升,在采后14 d达最高点,20 d时降至最低,之后又缓慢上升。
In order to approach the mechanism of softening, persimmon fruits "MOPAN" (Diospyros kaki L. )which were planted extensively in Tianjin were chosen to study the changes of firmness and the malondialdehyde (MDA) content during the storage. The results show that during storage of persimmon fruit, the firmness shows decreasing trend, and with the softening of the fruits, the MDA content increased quickly, and reached the peak at the 14th day of post-harvest, then decreased, and got down to the lowest point at the 20th day of post-harvest, subsequently, went up slowly.
