摘要 壳寡糖是壳聚糖通过化学法、酶法等方法降解得到的低分子聚合物,具有水溶性好、吸湿性与保湿性强、生物相容性好等特性,同时还具备调节免疫功能、抗肿瘤、抗氧化等生理活性,并在食品、医药等领域得到了一定的应用。本文重点对壳寡糖的制备方法和生理活性进行了归纳与总结,并对壳聚糖的前景提出展望。 Chitooligosaccharide could be obtained by chemical and enzymatic hydrolysis of chitosan. It had good physical properties( low molecular weight,good solubility,high absorption and biocompatibility,etc.),and various physiological activities( immune function regulation,antitumous and antioxidative activities effects,etc.),which makes its promising use in the fields of food,medicine,etc.In this review,chitooligosaccharide preparation and its physiological activity were highly summarized,and the prospect of chitooligosaccharide was proposed.
