摘要
介绍了大豆的营养保健功能研究现状,以及大豆中的一些生物活性成分异黄酮、多肽和皂甙等对改善胰岛素、调节血脂、抗氧化、提高免疫力等作用功效,重点阐述了大豆中生物活性因子的开发应用进展,并对其未来发展前景做了简要分析,旨在为大豆保健食品的研发提供理论依据。
The health function and the research about soybean were presented. The active compounds containing in soybean such as soybean isoflavones P.E. soybean peptides, soyasaponins improved insulin, blood-lipid regulation, antioxidative, strengthen immunity. The development and application of bioactive substance about soybean were futher studied, and a brief review was made on the development, it gave dietary supplement for the research of dietary supplement which was made with soybean.
