地沟油、花生油和调和油中微量元素含量差异的研究 被引量:3

摘要 应用电感耦合等离子体原子发射光谱法(ICP-AES)测定了地沟油与普通食用油中Na,Mg,Al,P,Ca,Fe,Zn和Pb等元素的含量,并对这些测量数据进行了对比分析。油样进行微波消解后,ICP-AES能直接测定处理液中的上述8种元素含量;地沟油中的Zn和Pb等重金属元素的含量并不比普通食用油高;而Mg,Al,P和Ca元素的含量,在地沟油、花生油和调和油之间却存在明显差异。花生油中P元素的含量明显高于在地沟油和调和油中的含量;调和油中的M g和Ca含量均明显比地沟油高,而调和油中Al的含量明显高于花生油。上述结果可以作为区分这3类油品的辅助信息。 Due to the impaction of production processes and raw materials, the content of heavy metals can not be used as the identification to distinguish the waste cooking oil and ordinary cooking oil. In order to find the content differences of trace elements in ordinary cooking oil and waste cooking oil, we determined the amount of Na, Mg, A1, P, Ca, Fe, Zn and Pb in these oil samples by inductively coupled plasma atomic emission spectrometry (ICP-AES), and these measurement data were compared. The results showed that the above eight kinds of elements in oil samples can be determined directly by ICP-AES after microwave digestion. And the amounts of of Zn and Pb heavy metals in waste cooking oil were not higher than those in normal cooking oil. But the amounts of Mg, A1, P and Ca in the waste cooking oil, peanut oil and mixed oil were significant different. The amount of P in peanut oil was significantly higher than that in waste cooking oil and mixed oil, and the amounts of Mg and Ca in mixed oil were significantly higher than those in waste cooking oil. Moreover, the amount of A1 in mixed oil was significantly higher than that in peanut oil. These results can be used as supplementary information to distinguish these three types of oil.
