摘要 以50%DHA藻油为芯材,变性淀粉和白砂糖为主壁材,利用单因素试验和Box-Behnken响应面设计试验研究变性淀粉、白砂糖、阿拉伯胶和芯材DHA藻油对DHA藻油微胶囊粉表面油含量的影响,优化DHA藻油微胶囊粉配方。得到的最佳DHA藻油微胶囊粉配方为:变性淀粉30.97%,白砂糖10.74%,阿拉伯胶4.47%,芯材DHA藻油36.15%,其他组分为酪蛋白1.76%,单甘酯2.14%,麦芽糊精13.77%。在最佳条件下得到的DHA藻油微胶囊粉表面油含量为0.59%,低于行业标准(SC/T 3505—2006)规定的1.0%。 With 50% DHA algal oil as core material, modified starch and sugar as main wall materials, the effects of dosages of modified starch,sugar, arabic gum and DHA algal oil on the surface oil content of DHA algal oil microcapsule powder were studied using single factor experiment and Box - Behnken re- sponse surface design to optimize the DHA algal oil microcapsule powder formula. The results showed that the optimal formula was obtained as follows: modified starch 30. 97%, sugar 10. 74%, arabic gum 4.47%, DHA algal oil 36.15% ,and other components were casein 1.76% ,monoglyceride 2.14% and maltodextrin 13.77%. The surface oil content of DHA algal oil microcapsule powder obtained was 0.59% ,which was lower than 1.0% of industry standard (SC/T 3505-2006) requirement.
