摘要
对济宁青山羊和波尔山羊的屠宰性能和肉品品质进行了测定和比较。结果表明,波尔山羊的屠宰性能显著高于济宁青山羊,活重、胴体重和净肉重指标均差异显著(P<0.01);但济宁青山羊肉品品质指标要优于波尔山羊,尤其是肌纤维直径较波尔山羊小,差异显著(P<0.05),另外EAA、DTAA和STAA含量也高于波尔山羊,说明济宁青山羊肉品味美多汁,肉质细嫩,肉品品质优于波尔山羊。
The slaughter performance and meat quality of Jining grey goats and Boer goats were deter-mined and compared.The results suggested that the slaughter performance of Boer goats was significantly high-er than that of Jining grey goats.There were significant differences in live -weight,carcass weight and net meat weight (P 〈0.01).However,the meat quality of Jining grey goats was higher than that of Boer goats, especially the muscle fiber,which was significantly thinner than that of Boer goats (P 〈0.05).The contents of EAA,DTAA and STAA in meat of Jining grey goats were higher than those in Boer goats.These demonstra-ted that the meat of Jining grey goats was more delicious and tender compared with Boer goats,so its meat quality was better than that of Boer goats.
