摘要
用异丙醇对猪油进行分提,以获得在常温下能保持液态的猪油。采用二次通用旋转试验设计,对猪油的分提条件进行了优化。结果表明:在冷却速率7℃/h、异丙醇用量200mL(以100g猪油为基准)、养晶时间15h的条件下,分提效果最好,液态猪油得率达78.98%;所得液态猪油的碘值(I)为80.96g,/100g,不饱和脂肪酸含量为68.44%,与原料猪油相比分别提高了23.45%和22.21%;所得液态猪油的胆固醇含量为0.368mg/g,与原料猪油相比降低了63.64%。
Isopropyl alcohol was used for lard fractionation so as to achieve the lard olein at room tempera- ture. The fractionation technology was optimized by quadratic general rotary design. The results showed that the optimal fractionation conditions were obtained as follows: cooling rate 7℃/h, isopropyl alcohol amount 200 mL( based on 100 g lard), crystallization time 15 h. Under the optimal conditions, the yield of lard olein was 78.98%. Compared with the raw lard, the iodine value (80.96 gI/100 g) and the con- tent of unsaturated fatty acids (68.44%) of lard olein increased by 23.45% and 22.21%, and the cho- lesterol content (0. 368 mg/g )decreased by 63.64%.
