摘要
依据HACCP体系的基本原则,分析丝瓜伤流液在生产工艺各环节中存在的潜在危害,确定相应的关键点、关键控制限值、监控方法和校正措施,最终建立HACCP计划,为该产品提供可靠的质量安全保障。
This paper describes the application of HACCP in production of bleeding sap fromLuffa cylindrica roem. According to the basic principle of HACCP system,after the hazards that might exist at every processing link are analyzed,the critical control points,critical limits,supervise systems and correct measures set up. The HACCP plan established can guarantee the product quality and safety.
