摘要
重点控制食品供应链上能消除或将食品安全危害降低到可接受程度的关键控制点,能够有效解决我国复杂食品安全风险对治理资源的巨大需求与有限规制资源之间的矛盾。本文在划分关键控制点层次的基础上,采用危害分析和统计分析方法收集风险数据,使用风险矩阵分析确定关键控制点,并且根据食品供应链的组织特征加以优化,提出了一种具有科学实用价值的食品供应链质量安全关键控制点定位模式。通过严密控制关键控制点上的风险因素,能够提高我国食品安全治理的效率和效果。
Through controlling critical control points in food supply chain, the contradiction between huge governance resource demands and limited regulation resources can be effectively solved. Based on three division levels of critical control points, the paper collects risk data by applying hazard analysis and statistical analysis methods, uses risk matrix to determine and optimize the critical control points based on the structure characteristics of food supply chain, and forms a kind of new critical control point positioning model of quality security of food supply chain which has highly practical value. The efficiency and effectiveness of food safety management can be improved through controlling risk factors of key control points.
