蛋氨酸是构成蛋白质的基本单位之一,是动物生长所需氨基酸中唯一含硫的必需氨基酸。其广泛应用于食品、医药及动物营养添加剂等方面。文章综述了蛋氨酸的生产方法、生物学功能、添加剂的应用及毒性方面的研究进展。
Methionine is one of the basic units of protein, and the only sulfur-containing essential amino acids for the growth of animal. Methionine are widely used in aspects of food, medicine and animal nutrition additives.This article reviewed the research progress on the production, biological function, application of additive and toxicity of methionine.
