摘要
[目的]研究油菜籽在储藏过程中挥发性成分的变化。[方法]通过对顶空固相微萃取法测定油菜籽挥发性成分条件的优化,并结合气质联用(GC-MS)技术研究水分含量8.4%的油菜籽,在35℃储藏条件下,不同储藏时间其挥发性成分的变化。[结果]研究表明,顶空固相微萃取测定油菜籽挥发性成分最优萃取条件是:萃取头50/30μm DVB/CAR/PDMS、萃取温度70℃、平衡时间60 min。油菜籽在储藏过程中,挥发性物质种类会增加,主要是烃类,其次是醛类和杂环类,酮类、酸类和醇类含量最少。其中烃类、醛类和酮类的相对含量会先增大然后减少,而酸类挥发性物质会不断增加。[结论]试验可为研究储藏过程中油菜籽特征挥发性物质变化规律和快速测定储藏菜籽品质、指导安全储藏提供理论依据。
[Objective] To study the change of volatile constituents in stored rapeseed. [Method]Through the optimization of headspace solid phase micro extraction method was developed for the determination of volatile components in conditions of rapeseed. Study the change of different storage time of volatile components under the temperature of 35 ℃ storage conditions and rapeseed moisture content 8. 4%. [Result] Research shows that: Headspace solid phase micro extraction for determination of volatile components of rapeseed optimal extraction conditions are: 50 /30 μm DVB / CAR / PDMS,the extraction temperature is 70 ℃ and the equilibrium time is 60 min. Rapeseed during storage,volatile substances will increase,the main hydrocarbon,followed by aldehydes and ketones,heterocyclic compounds,acids and alcohols content is less. The relative contents of hydrocarbons,aldehydes and ketones can increase first and then decrease,while the acid volatile substances will increase. [Conclusion]The study can provide theoretical basis for research variation law of volatile constituents in stored rapeseed,rapid determination of stored rapeseed quality,guidance of safety storage.
