摘要
蛋白质对人体有重要的生理功能,消化率是反映其营养价值的重要指标,受蛋白质来源、原料粒径大小、原料成熟度、蛋白质改性、非蛋白质成分和加工工艺等因素影响。本文对影响蛋白质消化率的因素作综述。
Physiological functions of proteins are important to human.Digestibility is an important indicator of its nutritional value and is influenced by many factors such as protein sources, particle size and maturity of raw material, modification of protein, non- protein components and processing technology.Thus,it's important to give a review on factors affecting digestibility of protein.
