摘要
应用液-液萃取(LLE)法结合气相色谱-质谱联用(GC-MS)对浓香型山庄老酒中吡嗪类物质进行分析,共定性了8种吡嗪类物质,分别是2-甲基吡嗪、2,5-二甲基吡嗪、2,6-二甲基吡嗪、2,3-二甲基吡嗪、2-乙基-6-甲基吡嗪、三甲基吡嗪,2-乙基-3,5-二甲基吡嗪和四甲基吡嗪,并对其中6种吡嗪类物质进行了定量分析。结果表明,2,6-二甲基吡嗪含量最高,为504.64μg/L,三甲基吡嗪和四甲基吡嗪的含量在100μg/L以上,2-甲基吡嗪及2,3-二甲基吡嗪的含量分别为33.14μg/L、22.48μg/L。
Pyrazines of Luzhou-flavor "Shan-Zhuang Lao-Jiu" were analyzed by liquid-liquid extraction coupled with GC-MS. Eight pyrazines were qualitative identified, which were 2-methylpyrazine, 2,5-dimethylpyrazine, 2,6-dimethylpyrazine, 2,3-dimethylpyrazine, 2-ethyl-6-methylpyrazine, trimethylpyrazine, 2-ethyl-3,5-dimethylpyrazine and tetramethylpyrazine. Among them, six common pyrazines were quantitative analyzed. Results showed that the content of 2,6-dimcthylpyrazine was the highest, which was 504.64 μg/L. The contents of trimethylpyrazine and tetramethylpyrazine were higher than 100 μg/L, and the content of 2-methylpyrazine and 2,3-dimethylpyrazine was 33.14 μg/L and 22.48 μg/L, respectively.
