摘要
目前大米主要作为口粮食用,对其深加工还远远不够。因此,以大米为原料进行米乳饮料的研发具有潜在的市场。分别从米乳饮料原料米的选择和预处理、营养保健、稳定性和特殊米乳加工工艺的研究等方面,综述国内外米乳的研究现状,并分析了功能性米乳饮料的国内市场前景。
Currently rice is mainly consumed as rations,its deep processing is not enough.Therefore,the research and development of rice milk beverage has a huge potential market.In this paper,the latest progress and research status of rice milk from the selection and pre-treatment of raw rice,nutrition and health,stability,and special processing,was reviewed,and the market prospect of functional rice milk beverage in domestic was analyzed.
