摘要
目的比较18种水果自由基清除能力。方法采用水杨酸法和邻苯三酚法分别对18种水果羟自由基(·OH)和超氧阴离子(O-2·)清除能力进行测定并比较。结果水杨酸法测定结果提示18种水果中橘子对·OH清除能力最强,火龙果最弱。邻苯三酚法测定结果提示18种水果中葡萄和橘子对O-2·清除能力最强。结论 18种水果大部分都有清除两种自由基的能力,不同种类水果对自由基清除能力不同。
Objective To compare the free radical scavenging capacity of eighteen kinds of fruits sold in jilin city.Methods The capacity of antioxidant were measured with salicylic acid method and pyrogallol method by ultravioletvisible spectrophotometry. Results Oranges was the best fruit for the hydroxyl radical scavengin and Pitaya was worst. Grapes and oranges was found as the best fruit for the superoxide anion radical scavenging. Conclusion Most fruits have the capacity of free radical scavenging and different fruits has the different capacity of free radical scavenging.
