摘要
[目的]研究酶解处理对马铃薯渣理化性能的影响。[方法]利用淀粉酶酶解马铃薯渣中的残余淀粉,释放薯渣中被淀粉包裹的纤维素,并利用傅立叶变换红外光谱仪(FTIR)和X射线衍射仪(XRD)研究了酶解前后马铃薯渣的化学组成和结晶性。[结果]扫描电镜分析发现,薯渣经过酶解后,结构松散,且在酶解前后表现出不同的理化性质。酶解后其阳离子交换能力、纤维素转化率、膨胀力、持水力和持油力均有所提高,乳化性和乳化稳定性也较高。酶解后的薯渣结构基团没有改变,纤维素的结晶度也没有变化。[结论]利用淀粉酶酶解马铃薯渣中的残余淀粉,酶解后薯渣的纤维素本质没有变化,却为肠道提供了一个有助于消化吸收的环境,更加有利于作为饲料添加组分。
[ Objective ] To study effects of enzyme treatment on physicochemical properties of potato pulp. [ Method] The chemical composition and crystalline structure of potato pulps of different treatments were studied by FTIR and XRD. [ Result ] Scanning electron microscope showed that enzymolysis made the structure looser. Therefore, different functional properties were shown in these samples. Higher values of ion exchange capacity, cellulose conversion ratio, expansibility, water- and oil- holding capacities were found in potato pulp after treatment by enzyme. And that higher emulsifying activity with high emulsion stability was shown in hydrolyzed potato pulps. [ Conclusion] The hydrolyzed potato pulps did not change compared with that of untreated, and it is helpful to provide environment for intestinal digestion and absorption and more conducive as feed additive .
