摘要
食品保藏原理是食品科学与工程专业一门重要的专业基础课,其教学质量的好坏直接影响整个专业的教学质量。结合教学实践对食品保藏原理课程的教学模式进行研究,探索建立包括教学内容、教学目标、教学方式、考核体系的课程体系。
Principles of food preservation is an important professional basic course of the food science and engineering major.The teaching quality makes direct impact on the entire specialized teaching quality. Teaching mode of introduction to principles of food preservation is studied to establish course system,including teaching content,teaching objectives,teaching methods and evaluation system.
