摘要
食品防腐剂是食品贮藏加工的一种有效辅助手段,发挥着重要作用。通过防腐剂抑制或杀灭微生物,可以阻止或延缓食品腐败变质,提高食品色、香、味,保护食品优良品质。从介绍食品防腐剂概念、发展趋势和分类入手,分析了食品防腐剂的安全性能以及危害预防等,旨在为食品防腐剂的安全使用提供参考。
Food preservative as an efficient auxiliary means plays an important role in food storage and processing.Degradation of food quality will be obstructed or delayed by inhibiting or killing microorganisms with preservatives, so that color, smell and taste of foods will be improved. From the perspective of concept, development trend and classification of food preservatives,security and hazard prevention of food preservatives were analyzed to provide references for safe application of food preservatives.
