摘要
【目的】分析新疆不同产地核桃营养含量差异,研究各营养成分对核桃产地来源的判别效果,探讨核桃营养成分指纹分析技术对新疆不同产地核桃鉴别的可行性。【方法】检测来自新疆阿克苏地区温宿县、和田地区和田县、喀什地区叶城县3个核桃主产区18份样品的含油率、脂肪酸含量、微量元素含量、氨基酸含量、蛋白质含量及碳水化合物含量,分别对数据进行单因素方差分析及非参数检验。【结果】新疆阿克苏地区、喀什地区和和田地区核桃中碳水化合物含量有显著的地域差异。【结论】碳水化合物指纹分析是用于新疆核桃产地鉴别的一种潜在技术。
【Objective】The project aims to analyze the difference of Xinjiang walnut nutrient content among different regions and study the discriminant effect that various nutrients of walnut reacted from different origin. The feasibility according to geographic origin based on nutrient composition fingerprint analysis was discussed. 【Method】Oil content,fatty acids,trace elements,amino acids,protein and carbohydrate content of18 samples from Wensu,Hetian and Yecheng were tested. All date were discussed by variance analysis single factor and non parameter test.【Result】There were significant geographical differences in carbohydrate content of walnut in Hotan area,Akesu area and Kashi area.【Conclusion】Carbohydrate fingerprinting is a potential technique for identification of Xinjiang walnut origins.
