大豆球蛋白及β-伴大豆球蛋白的研究进展 被引量:2

摘要 大豆是一种高蛋白含量的作物,在畜禽养殖中多用作蛋白质原料。但其抗营养因子限制了大豆的使用,其中大豆球蛋白及β-伴大豆球蛋白又是主要的抗原蛋白。文章主要综述了大豆球蛋白及β-伴大豆球蛋白的结构、抗营养作用和抗原性的消除方法。 Soybean is a high protein crop, is used as protein feed in production of livestock and poultry. But the anti-nutritional factors limit the use of soybean, while glycinin and β-conglycinin are major antigenic proteins in soybean. This article reviewed the structures, anti-nutritional effects and eliminating antigenicity of glycinin and β-conglycinin.
