摘要 超高压杀菌技术能较好的保持食品的营养和风味,作为最具潜力的保鲜技术之一,超高压对包装材料的影响引起人们的关注。本文综述了目前所有关于超高压对软塑包装材料影响的研究,总结了高压处理对材料结构、机械性能、阻隔性能以及物质迁移与吸附的影响,总结分析了材料结构、性能变化的原因。总结得出材料自身性质、处理条件、内容物与材料的相互作用、包装内顶隙空间体积等都是超高压对材料影响的因素,提出从微观研究材料结构与分子运动才能进一步研究超高压对材料的影响机理。 As one of the most potential preservation technology,ultra high pressure sterilization technology could better maintain the nutrition and flavor of food. The effects of ultra high pressure on the packing material gain our attention. This paper reviewed the current research about the influence of ultra high pressure on soft plastic packaging materials,summarized the effect of high pressure treatment on material structure,mechanical properties, barrier properties,mass transfer and adsorption ,analyzed reasons of changes on material structure and performance,concluded that the important factors of effect of ultra high pressure on materials include the material properties,processing conditions,the interactions of contents with materials and package headspace volume etc. Pointed out that In order to give a further research on the impact mechanism of ultra high pressure ,we could study the material structure and molecular motion from the micro.
