摘要
研究了以胡萝卜渣为原料,通过酶解、脱色得到质量较好的膳食纤维的最佳提取和脱色工艺条件。结果表明:榨汁后的胡萝卜渣,在pH为5.0,反应温度为55℃,蛋白酶的加入量为0.6%的条件下作用2 h以除去蛋白;在pH为6.0,反应温度为60℃,淀粉酶加入量0.8%的条件下作用2 h以除去淀粉;选用双氧水作脱色剂,其中脱色温度45℃,双氧水加入量为5%,pH为9-10,脱色时间2 h。最后真空干燥即得胡萝卜膳食纤维为浅白色粉末,含量为83.25%(干基)。该试验提取的胡萝卜膳食纤维的持水力6.4 g/g,膨胀力6.9 mL/g。
This paper studied the optimum extracting and decolorizing technological conditions of carrot dietary fiber ,which derived from the carrot residue as raw material, through the processes of enzymatic hydrolysis and decolorizing. The results showed that the best reacting conditions of protease:the addition amount of protease 0.6%, the reaction temperature 55℃,reaction time 2 h and pH 5.0;the best reacting conditions of amylase:the addition amount of amylase 0.8%, the reaction temperature 55℃, the reaction time 2 h and pH 6;The best decolorizing conditions:H2O2 as the decolorizing agent and its addition amount is 5%, the reaction temperature 55℃, pH 9-10 and the decolorizing time 2 h.The final carrot dietary fiber is light white powder and the purity is 83.25%. Its water holding and swelling capacities are 6.4 g/g and 6.9 mL/g.
