红花羊蹄甲花色素提取工艺优化及其稳定性研究 被引量:7

摘要 采用有机溶剂浸提法,研究了红花羊蹄甲花色素的提取条件和稳定性。结果表明:红花羊蹄甲花色素在530 nm处有最大吸收峰,用体积分数为20%的乙醇溶液提取,料液比为1∶40(g/m L),温度为30℃,提取时间为10 min时,色素的提取率达到较高值。该色素有较好的耐光性和热稳定性,抗氧化性和还原性较差,苯甲酸钠和蔗糖的影响较小,柠檬酸对色素有一定的增色作用。 The extraction and stability of the pigment from Bauhinia blakeana Dunn flower were studied. The result showed that : the pigments with maximum absorption peak at 530 nm, the volume fraction of 20 % alcohol solution, solid to liquid ratio of 1 ∶ 40(g/m L), the temperature of 30 ℃, extraction time of 10 min, the extraction rate of pigment was higher. The pigments had good thermol and photic stability,but its antioxidation and anti-reductive were worse. The effects of sodium benzoate and sucrose were relatively small. Citric acid had a certain hyperchromic effect on the pigment.
